Ingredients :
Base:
7 eggs
200g sugar
180g chocolate (over 60%)
140g butter
150g flour
1 teaspoon baking powder
Filling:
500g cream cheese
100g melted dark chocolate
40g cocoa powder
100g powdered sugar
350-400g apricot marmalade
Buttercream:
300g butter
65g cocoa powder
400g powdered sugar
𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :
Step 1 - Melt chocolate with the butter. Let it cool down a bit.
Step 2 - Seperate the eggs, and add the egg yolks to the chocolate/butter mixture. Whisk till combined (and you reach a thick texture).
Step 3 - In the mean time beat the egg whites on high speed, until fluffy then add the sugar (still on high speed) until you get stiff meringue peaks (about 5 min)
Step 4 - Combine the thick chocolate mixture with the meringue and sift in the flour and baking powder.
Step 5 - Fold with a spatula (or big spoon) about 15-25 times) the ingredients should be combined, but be careful not to overmix!
Step 6 - Bake at 180°C for 35 minutes, you can check if the cake is ready by using a toothpick: If the toothpick comes out with crumbs or clean Its done!
Step 7 - Add the creamcheese, powdered sugar and cocoa powder in a bowl.
Step 8 - Mix on high speed and add the melted chocolate.
Step 9 - The filling should start thickening. Set in the fridge for at least 30 minutes before filling the cake.
Step 10 - Add 300g butter, 65g cocoa powder, 400 g powdered sugar ingredients together in a bowl with a hand mixer on high speed (for about 7-8 minutes) until you reach a fluffy texture! Use immediately!
Step 11 - To assemble the cake: follow the steps in the reels video!
Step 12 - Let the cake sit in the fridge over night (or 2 hours at least)
