Cherry Rolls with Cherry Cream Cheese

Get ready to indulge in a burst of cherrylicious delight with Cherry Rolls. These heavenly swirls of soft, pillowy dough are generously filled with a luscious cherry-infused cream cheese filling that's simply irresistible.

Ingredients :
Dough:
240 ml warm milk
2.5 teaspoons instant yeast
2 eggs
75 grams butter
100 grams sugar
1/2 teaspoon salt
500 grams all-purpose flour (add more, if needed)
Cherry jam:
1tbsp cornstarch
3 tbsp water
400 g cherries (can be frozen)
1 tbsp sugar
Cherry cream cheese frosting:
100 g cream cheese
50 g room temperature butter
1 tbsp powdered sugar
1 tbsp cherry jam
1/2 tsp vanilla extract
𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :
Step 1 - Warm milk and sugar, add yeast and let it rest for 5 minutes.
Step 2 - Add in melted butter, eggs, salt and combine together.
Step 3 - Start gradually adding in the flour until a dough has formed.
Step 4 - Knead the dough for 5 minutes, it should be a little sticky, but still easy to work with.
Step 5 - Let it rest for 1 hour in a warm place or until doubled in size.
Step 6 - In a pot, on medium heat, combine water and cornstarch, when the cornstarch has dissolved, add in the cherries.
Step 7 - Let the cherries cook until soft and mushy.
Step 8 - With a hand blender, blend the cherries and place back on the stove.
Step 9 - Add in the sugar, let it cook for two more minutes and remove from the heat. pour in a jar and let the jam cool.
Step 10 - When the dough has finished rising, roll out into a rectangle and spread a even layer of the cherry jam on top.
Step 11 - Roll it up, and using a dental floss cut the rolls. place into a baking tray and pour over 80 ml heavy cream. (this is optional, but it will make the rolls a lot softer and fluffier)
Step 12 - Preheat the oven to 190°C degrees and bake for 20-22 minutes.
Step 13 - With a mixer, beat softened butter for 2 minutes until light and fluffy.
Step 14 - Add in the cream cheese and beat together for another minute.
Step 15 - Add vanilla extract and powdered sugar, mix until smooth.
Step 16 - Finally, add the cherry jam and mix until the red colour has evenly spread trough the frosting, you can add more jam, depending on how bright, you would like it.
