Cinnamon & Walnut Baklava Cheesecake

Experience the best of both worlds with Cinnamon & Walnut Baklava Cheesecake! Rich, creamy cheesecake meets the sweet crunch of baklava, creating a fusion of flavors in every slice.


Total time: 2hr. 10min. Servings: 8


Ingredients :

Cheesecake filling:

600 g creamcheese

100 g sour cream

170 g sugar

1 tbsp cinnamon

1 tsp vanilla

3 eggs (4 small)


Baklava crust:

1 package of filo pastry sheets

175 g melted butter

150 g crushed walnuts

1 tbsp cinnamon

4 tbsp powdered sugar

50 crushed digestive biscuits


Baklava top:

150 g baklava filo sheets

100 g finely crushed walnuts

50 g finely crushed biscuits

100 g melted butter


For the syrup:

150 g sugar

170 ml water

1 tbsp cinnamon


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :

Step 1 - Cream the creamcheese and sourcream with the sugar, cinnamon and vanilla by hand in a bowl.

Step 2 - Add the eggs and whisk till homogenius.

Step 3 - In a 22 cm spring form, layer a sheet of filo pastry, brush with butter (repeat 8-10 times with butter inbetween each layer)

Step 4 - Add all the baklava filling.

Step 5 - Repeat step 3.

Step 6 - Pre-bake the crust at 165°C for 15 minutes.

Step 7 - Add the cheesecake filling.

Step 8 - You don’t need a waterbath for this recipe, though I do recomend putting a small bowl of water on the side for steam.

Step 9 - Bake at 165°C / 320°F (fan) at least 1 hour and 30 minutes.

Step 10 - Let it cool down in the oven for 20 min. Set in the fridge overnight.

Step 11 - Make the baklava filling by mixing the finely crushed nuts and biscuits in a bowl and set aside.

Step 12 - Place the filo sheet in a springform (same size as the one you’ll be using for your cake) mine was 22 cm.

Step 13 - Layer half of the filo sheets on the form and brush with butter inbetween each layer.

Step 14 - After layering half of the filo sheets, add the baklava filling and repeat the process with layering the filo sheets with butter inbetween.

Step 15 - Cut to desired pieces (8-12 pieces).

Step 16 - Bake the same as the cake.

Step 17 - Cook everything up in a saucepan on medium heat (20 min) Cool down so it’s still warm to the touch.

Step 18 - To assemble: Place the baklava on top by flipping it upside down to a plate, or placing the slices on slice by slice.

Step 19 - Pour over the warm syrup and sprinkle with walnuts.
