Creamy Pumpkin with Vodka

A velvety blend of pumpkin goodness, swirled with the warmth of vodka, creating a cozy and delightful dish.

Total time: 20min. Servings: 4
Ingredients :
1/4 cup vodka
1 tsp nutmeg
1 package pasta
1 cup pumpkin puree
2 tbsp olive oil
1 garlic clove, minced
1 tsp chili flakes
1 cup heavy cream or milk
1 cup parmesan cheese
2 tbsp tomato paste
1 white onion, diced
salt
pepper
𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :
Step 1 - Bring a large pot of salted water to boil
Step 2 - Cook pasta according to box instructions.
Step 3 - Reserve 1 cup of pasta water and set aside.
Step 4 - Heat a large saucepan over med-high heat, add olive oil, onions and garlic.
Step 5 - Add chili flakes, salt & pepper and cook down until soft.
Step 6 - Add in tomato paste and cook for 10 minutes until brown bits form at the bottom of the pan.
Step 7 - Deglaze pan with Vodka and cook for 5 minutes
Step 8 - Add in pumpkin puree and milk/cream.
Step 9 - Mix together until combined.
Step 10 - Bring temp to low-med and season sauce with salt, pepper and nutmeg.
Step 11 - Once pasta is cooked, add in pasta directly to the sauce.
Step 12- Mix together until all pasta is evenly coated and add pasta water as needed to thin out the sauce.
Step 13 - Plate and top with parmesan cheese and black pepper.
