Golden GLOW Soup

Ingredients :

1 tbsp olive oil or chicken broth

1 yellow onion, diced

2 carrots, diced

4 cloves garlic, minced

1 rib celery, diced

1 tsp dried oregano

1/2 tsp black pepper

7 cups chicken broth

1 can white beans, drained and rinsed

2 lemons, squeezed

1 handful fresh kale

1/4 cup tahini

1 tsp lemon zest

1 cup orzo

1/4 cup fresh dill

1 tsp turmeric


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :

Step 1 - In a pot over medium heat, add the onion, carrot, celery and garlic.

Step 2 - Let them until they are soften, approximately 5 minutes.

Step 3 - Add the chicken broth, drained and rinsed can of white beans, lemon juice and lemon zest to the pot.

Step 4 - Bring to a boil, then simmer for 10 minutes covered.

Step 5 - Stir in the kale, fresh dill and orzo and cook for another 10 minutes until the orzo is cooked through, keeping the lid off and stirring intermittently to prevent the orzo from sticking.

Step 6 - Stir in the tahini and turmeric until combined and heated through.
