One Pot Hunters Chicken Rice

Embark on a flavor expedition with Hunters Chicken Rice – a hearty blend of succulent chicken, smoky bacon, and a medley of vibrant flavors, all nestled atop a bed of fluffy rice.

Ingredients :
500g chicken (diced)
150g diced bacon
1 onion (finely diced)
2 cloves garlic (finely grated)
1tbs bbq seasoning (or to taste)
1tbs smoked paprika
1tbs tomato purée
2tbs bbq sauce
250g uncooked basmati rice
600ml chicken stock
120g cheese (I used a mix of cheddar, red leicester and mozzarella)

𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :
Step 1 - Fry off your chicken, bacon and the seasoning in a large frying pan.
Step 2 - Once browned add in your onions and cook until soft, then add in the garlic, tomato purée and bbq sauce and cook for a few minutes.
Step 3 - Add in the uncooked basmati and the chicken stock.
Step 4 - Pop the lid on and cook on a low heat for around 20 minutes or until the rice is fully cooked, adding more liquid if needed.
Step 5 - Make sure you don’t stir the rice after it’s cooked, just fluff it with a fork.
Step 6 - Once cooked sprinkle with the cheese, place it under the grill until golden and bubbling.
Step 7 - Drizzle over the bbq sauce.
