Lemon & Blueberry Cake

Immerse yourself in a burst of citrusy delight with Lemon & Blueberry Cake - a zesty creation that marries the tanginess of lemons with the sweet juiciness of blueberries.


Total time: 37min. Servings: 7


Ingredients :

100g butter (slightly softened)

150g sugar

3 eggs (medium)

190 g flour

60 ml sour cream (creme fraishe)

1 tbs. baking powder

zest of 1 big lemon

200g frozen or fresh blueberries


Toppings:

lemon

fresh blueberries

whipped cream


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :

Step 1 - Infuse the sugar with the lemon zest.

Step 2 - Cream the butter with the lemon infused sugar on high speed (4 minutes) do not overbeat.

Step 3 - Add sour cream.

Step 4 - Beat 1 minute.

Step 5 - Add the eggs and beat one at a time.

Step 6 - Sift in the flour and bakingpowder and beat for 1/2 minute on low speed.

Step 7 - Fold in the blueberries and bake for around 30 minutes (depending on the oven) on 185 °C (fan oven).

Step 8 - Check if it’s done with a tooth pick before taking it out.

Step 9 - Serve with whipped cream and berries of choice
