Red Velvet Brownie Sandwich

Ingredients :

For Red Velvet Brownie Cookies:

180 g semi sweet chocolate chips (½ c.)

112 g unsalted butter (¼ c.)

24 g natural unsweetened cocoa powder (2 tbsp.)

3 tsp. gel red food dye

180 g light brown sugar (⅓ c. + 1 tbsp.)

2 egg

160 g all purpose flour (⅔ c.)

2 tsp. baking powder

1 tsp. salt


For Cream Cheese Frosting:

200 g cream cheese room temperature (½ c.)

84 g unsalted butter room temperature (3 tbsp.)

0.5 tsp. salt

1 tsp. vanilla

180 g powdered sugar (¾ c.)


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :

Step 1 - Preheat the oven to 350°F = 175°C.

Step 2 - Line a cookie sheet with parchment paper or a silicone baking mat.

Step 3 - In a small microwave safe bowl, melt together the chocolate chips and butter until the mixture is smooth.

Step 4 - Then, mix in the cocoa powder and red food dye and set aside.

Step 5 - In another small mixing bowl, add in the egg and brown sugar.

Step 6 - Vigorously whisk the egg and sugar together for 1-2 minutes, until the mixture is light and fluffy.

Step 7 - Add the melted chocolate mixture into the egg mixture, and mix gently until combined.

Step 8 - Add in the flour, baking powder, and salt. Use a rubber spatula to fold the ingredients just until no flour streaks remain. Note that the batter will be more liquidy like brownie batter, not as firm as cookie dough.

Step 9 - Use a small cookie scoop (1.5 tbsp.) to dish out the cookies evenly spaced apart on the lined baking tray.

Step 10 - Immediately after taking the cookies out of the oven, you can take a bowl that is slightly larger than the cookies and swirl it around over the cookies to make them a little more uniform and circular.

Step 11 - Wait for the cookies to fully cool to room temperature before frosting.

Step 12 - In a small mixing bowl, beat together the cream cheese, butter, salt, and vanilla until the mixture is smooth.

Step 13 - Then, beat in the powdered sugar in two additions until smooth.

Step 14 - Transfer the frosting to a piping bag fitted with a large round tip, then frost the bottom of half of the cookies.

Step 15 - Sandwich the cookies together, then serve and enjoy!
