Ingredients :
For the crust
2 cups crushed graham crackers
1/4 cup sugar
dash of cinnamon
6 tablespoons butter, melted
For the cheesecake:
24 oz cream cheese, room temp
1 cup sugar
1/2 cup sour cream
juice of half a lemon
vanilla extract
3 eggs , room temp
For the topping:
3/4 cup salted caramel sauce
𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :
Step 1 - Preheat oven to 350°F = 177°C
Step 2 - Combine graham crackers, sugar and cinnamon in a medium bowl.
Step 3 - Stir in the butter until combined.
Step 4 - Use a glass to press this into the bottom of a springform pan.
Step 5 - Bake for 10 minutes or until slightly golden brown.
Step 6 - Remove from oven and set aside.
Step 7 - In a large bowl beat together all of the cheesecake ingredients except for the eggs until smooth.
Step 8 - Add the eggs and beat just until combined, you don’t want to overmix here.
Step 9 - Pour batter over the graham crust and place the springform pan into a pan that’s 2 inches larger on all sides (cover the bottom of the springform pan with foil to ensure water does not seep through) if you don’t have a larger pan you can skip the water bath-the texture of your cheesecake will be different and the top might crack but it will taste just as good!
Step 10 - Pour warm water into the larger pan and bake the cheesecake for about 55 minutes or until it’s mostly set.
Step 11 - Turn oven off and Crack the door open while cheesecake is still inside for 1 hour.
Step 12 - Remove from the oven and let cool completely before placing in the fridge for 8 hrs.
Step 13 - Top with caramel sauce and flaky sea salt.
