Simit Style Bagles

Experience the perfect fusion of cultures with Simit Style Bagels - a delightful twist on the classic, marrying the chewy goodness of New York with the aromatic charm of Turkish Simit.


Total time: 1hr 20min Servings: 6


Ingredients :

280 ml lukewarm water

50 g yogurt

500 g flour

2 tsp salt

1 tsp sugar

20 g fresh yeast or 1 tbsp active dry yeast (you need to bloom the active dry yeast with a pinch of sugar in wayer for 8-10 minutes before adding the flour)


Toppings:

1 egg

150 g sesame seeds (slightly golden ~ roasted on a pan on low to medium heat) (you can also use any other types of seed that you prefer)


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :

Step 1 - Start by dissolving the yeast and sugar in the water.

Step 2 - Add yogurt.

Step 3 - Add the flour and salt, and kneat for 5 minutes on medium to high speed (with your dough hook attached) and for another minute on the surface.

Step 4 - Let the dough rise in a bowl with a damp dishtowel for around 1 hour + 15 minutes.

Step 5 - Punch the dough and give it another light kneat.

Step 6 - Divide the dough into 6 and roll them into around 25-30 cm strings.

Step 7 - Swirl the strings (like so in the video), brush with eggwash and cover with sesame seeds.

Step 8 - Let them rise for a second time for 20 minutes before baking at 200°C (fan oven) for 20-25 minutes.

Step 9 - After baking, put a damp dishtowel over the freshly baked simits imidiatly and keep it on for at least 10 minutes, so they become soft to the touch.

Step 10 - You can add some creamcheese or butter!
