Sweet Potato, Kale & Chickpea Curry

Embark on a flavor-packed adventure with Sweet Potato, Kale & Chickpea Curry recipe! Vibrant veggies and hearty chickpeas come together in a tantalizing dance of spices

Ingredients :

1 sweet potato, cut into chunks

1 small head cauliflower, cut into florets

1 tbsp extra olive oil

1 can chickpeas

1/2 tbsp coconut oil

1 (14 oz) can full fat coconut milk

3 tbsp almond butter

2 tbsp tomato paste

1/2 tbsp minced garlic

1 tbsp curry powder

3/4 cup bone broth

1 bunch Dino kale, finely chopped

salt, to taste


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :

Step 1 - Preheat oven to 425 F.

Step 2 - Toss sweet potato and cauliflower with olive oil + a dash of salt.

Step 3 - Spread on greased baking sheet and bake for 20-25 minutes.

Step 4 - Mix together almond butter, tomato paste, and coconut milk until fully combined. Set aside.

Step 5 - Heat coconut oil in a skillet at medium heat.

Step 6 - Add garlic and curry powder for 2-3 min.

Step 7 - Add almond butter mixture and stir until combined.

Step 8 - Follow with bone broth.

Step 9 - Next add in chickpeas, sweet potatoes and cauliflower

Step 10 - Bring to a boil then reduce heat and simmer about 5-7 minutes.

Step 11 - Finally add in kale, stir in and allow to wilt.

Step 12 - Serve with brown rice.
