Thai Red Noodle Prawn Soup

Ingredients :
300g raw prawns
4 cloves garlic
40g ginger
6 tbsp red Thai curry paste
700ml chicken stock
2 tin coconut milk
200g egg noodles
2 carrot, julienne
8 stems of tender stem broccoli
4 tsp fish sauce
4 tsp soy sauce
2 tbsp honey
2 tbsp almond butter
1/2 lime
Garnish
bok choy
extra carrot, julienne
sesame seeds
fresh red chilli
spring onion
chilli oil
coriander
extra lime
𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :
Step 1 - Finely diced the garlic and ginger, sauté in a pan with a little bit of oil for a couple of minutes.
Step 2 - Add the curry paste and cook for a further minute.
Step 3 - Add the stock and coconut milk and bring to the boil.
Step 4 - Reduce the heat immediately and bring to a gentle simmer.
Step 5 - Julienne the carrot and slice the broccoli into thin strips.
Step 6 - Now add the noodles, prawns, broccoli and carrot and broccoli to the pot and simmer for around 5 minutes until the prawns and noodles are fully cooked.
Step 7 - Add the soy, fish sauce, almond butter and squeeze of lime and mix through.
Step 8 - Choy, sprinkle of sesame seeds, fresh red chilli, spring onion , squeeze of lime, fresh coriander, and a drizzle of chilli oil
