Vegan Almond Mouse Cookies

Indulge in plant-based bliss with Vegan Almond Mouse Cookies! These delightful treats combine the crunch of almonds with a melt-in-your-mouth texture, all without any animal products.

Ingredients :

1 cup oat flour

¾ cup gluten-free flour

1 tsp baking soda

½ cup almond butter

⅓ cup maple syrup

2 tbsp almond milk

2 tsp vanilla extract

a pinch of salt

mouse tail = stem of any dried leaf


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡 :

Step 1 - Preheat oven to 350°F = 176°C

Step 2 - Line a baking pan with parchment paper.

Step 3 - In a large bowl, combine oat flour, GF flour, baking soda, and salt. Whisk until smooth.

Step 4 - Add almond milk, maple syrup, almond butter, and vanilla extract and mix until a dough forms.

Step 5 - Allow the dough to sit for a few minutes. If the dough feels too dry, you can add an additional tablespoon of non-dairy milk.

Step 6 - Roll dough into small balls, about 1.5 tablespoons in size, and pinch one side to create a teardrop shape. Place on a lined baking sheet.

Step 7 - To create mouse shapes, press 2 sliced almonds into the head of the mouse, to create the ears.

Step 8 - Bake cookies for about 10-12 minutes.

Step 9 - Melt dark chocolate chips to create a nose and eyes for each mouse.
